With another Sunday here we are getting even closer to the Superbowl, and even closer to finding the best halftime snack. This week we will take a look a great dish that originates from Texas. Cowboy Caviar is a fun recipe that utilizes fresh corn, peppers, and beans to make a great salsa like snack.

What you will need:

  • Red pepper 4 Each (Minced)
  • Green pepper 4 Each (Minced)
  • Yellow pepper 4 Each (Minced)
  • Jalapeño 2 Each (Minced)
  • Corn 3 Cups
  • black eyed peas 1 Cup
  • Kidney beans 1 Cup
  • Garbanzo beans 1 Cup
  • Red onion 1 Cup (Minced)
  • Black beans 1 Cup
  • Roma tomatoes 8 Each (Chopped)
  • Cilantro 1 Bunch (Minced)
  • Lime 2 Juiced
  • Sugar 1/2 Cup
  • Olive oil 1/4 Cup
  • Red wine vinegar 1/4 Cup
  • Chili powder 2 Teaspoons
  • Salt 1.5 Tablespoons
  • Pepper 1 Tablespoon
  1. In a small bowl whisk together the sugar, vinegar, oil, spices, and lime juice.
  2. In a large bowl toss together all of the other ingredients.
  3. Pour over the sugar mixture and mix evenly.
